Easy Quick Vegan Meals

If you do not have at your disposal easy quick meals, then you are setting yourself up for failure.

This post is for people such as yourself. But keep in mind most people have the time, they just need to prioritize the time they have available.

And what could be more important than taking better care of yourself by cooking healthy food to nourish your body?

This is why you need easy quick vegan meals. They are the kind of meals that can be put together very fast without much preparation. You could be eating healthy shortly after deciding what you want to eat.

I Am Not A Good Cook, What Can I Do?





I am not a chef either, but with a little practice you will be preparing delicious and nutritious vegan meals.

A good meal does not have to be complicated to make. Complicated meals are a roadblock to busy people that want to eat healthy. They think they don’t have time to prepare home cooked meals. So what they end up doing is eating fast food.

They basically give up eating healthy because they say they don’t have the time to cook

But most people do find time when they want something bad enough.

This is where you have to start. You must want to prepare your own healthy food bad enough to be disciplined to do it.

We all have the same amount of time each day. You need to have ingredients on hand to make healthy fast vegan meals.

Something as simple as a healthy cereal with almond milk with added blueberries, and raw nuts or seeds is a great meal. I usually add stevia if I want to make it sweeter.

Some cereals I may eat are grapenuts, shredded wheat, Ezekiel cereals, and of course oatmeal. The criteria I use for cereals are no sweeteners added, non-gmo, whole grain, and no ingredients I can’t pronounce and no added synthetic vitamins, spare for the grapenuts which has a little though can depend on where you get it from. I actually eat cereal any time I feel like it, not just for breakfast.

I Don’t Like To Cook

A lot of people don’t like to cook.

It is not my favorite thing to do either, but I do love to eat, so that is my reward.

So another thing I have on hand are beans in a can. Rinsed, soaked, dry organic beans are best but always have canned beans on hand.

Here is an easy quick vegan chili recipe.

You can easily double or triple this recipe, if you are cooking for more than one. You can also make enough for left overs.

  • One can of kidney or any beans you like. You can even mix beans.
  • One can of diced tomatoes with liquid
  • One can of corn
  • Better than Bouillon or vegetable broth that you use
  • onion powder
  • garlic powder
  • smoked paprika
  • chili powder
  • salt to taste
  • water

Pour one cup of water in a pot. Add heaping teaspoon of Better Than Bouillon

Add one can of diced tomatoes, I usually mash mine in the pot. I then add the spices, one teaspoon of each.

Salt to taste.

Now add all the canned items.

Bring to a boil and simmer for about 15 minutes or until your desired thickness.

That’s it, simple and easy.

I sometimes tweak this recipe. I may add chopped kale, kicking up the nutrition a notch. Just let your imagination run wild.

Either way it is very good and this is just one example of an easy quick vegan meal. One of the dishes that I eat pretty often.

Where Do I Begin?




Start by being a steady reader of my posts. I love to help anyone that is interested in being a vegan. I know anything new can be a little scary, but I am here for you.

I will help you in any way I can, so your transition to being a vegan will be as smooth as can be. There are different challenges for different people. I can help you get through these challenges and possibly avoid them.

When I was transitioning I had many bumps in the road, but I learned from these. I attempted to being a vegan multiple times, but failed I forget how many times.

But I was very persistent.

I also loved reading and learning about health and diet, and every time I would read about certain health challenges, it seemed that a bad diet was usually the cause.

I wanted to know what diet provided the best support for a healthy body. It was narrowed down to a mostly plant-based diet.

I went hardcore into a practically raw vegan diet, multiple times, but It wasn’t sustaining for me. I also lost a lot of weight that I didn’t need to lose. My family thought I wasn’t eating, but I was actually eating a lot.

It’s when I started adding nuts, seeds, beans, whole grains, and cooked vegetable meals, along with raw, that I actually felt better and started gaining good weight back.

I still had a lot to learn, but this was a great start, and I never looked back.

I am so happy and grateful that I am able to share all the information that I have learned over the years with people that really are interested in this wonderful diet.
